Jim Dixon

Sunday, 25 August 2013

Do any of you know who Jim Dixon is? Not the Jim Dixon who arrived in Sydney as a convict in 1800 – given his freedom in 1803 - who became the first priest to say mass in the colony of New South Wales. Not that one. Jim Dixon of Real Good Food. Realgoodfood.com, from Portland, Oregon. Gem. Gem. Gem. A Portland institution I understand. I don’t know him but I know he’s a gem of a guy and I am now subscribed to his blog thanks to my big brother Eric. I love Jim. Honestly he is too much. He makes and sells imported olive oil, vinegars, beans and a couple other things but not much more - and he is a hoot and a half. You have to check out his blog and get his email. He’s just so good you want to devour him....

More More More Tomatoes…This Time Soup

I’ve been exploring recipes for tomato soup. It’s become a mini-obsession. I haven’t been making tons of recipes or anything – just reading them – and there are so many. And there are so many tomatoes. The recipe I made tonight – or finished tonight – is a roasted Italian tomato soup. I started it yesterday morning. I combined a few roasted tomato soup recipes that I read. In the middle of the recipe I realized that I was out of vegetable stock so I had to take last evening to whip some up. Good to have around in the freezer anyway. Tonight I finished the soup and served it with mini grilled cheese and tomato sandwiches. It felt like a winter meal – I guess because we used to eat Campbell’s tomato soup...
