Preserved Lemon Chicken

Tuesday, 04 July 2017

This recipe has been a household favorite since I discovered the joys of preserved lemons. I used to buy them at Whole Foods. Now I make them and they’re super easy with a little planning. While pickling, the lemons need to sit around the refrigerator for a month or so minimum. Check out the Blog from February 28, 2013 and also from February 8, 2016. Both have recipes for preserved lemons. PRESERVED LEMON CHICKEN Preheat oven to 450° Ingredients: 2 preserved lemons 1 pound or 6 chicken thighs or 3 split breasts Olive oil Finishing salt (Maldon or another good variety) Pepper Directions: Pour a little olive oil onto a baking sheet or into a baking pan or casserole. Place the chicken in one layer in...

Baked Whole Chicken with Lemon

Monday, 28 July 2014

This most delicious recipe for chicken comes from a famous chef via my son’s friend who got it from his friend. Names are not disclosed by request of the recipe provider. I will say no more other than that it is DELICIOUS. I can tell by looking at it . The skin is deeply, darkly golden and crispy. The chicken meat is juicy and succulent looking falling away from the fork and knife at the mere suggestion of being cut. How can anything cooked with lemon and salt and pepper and potatoes and garlic and carrots be bad? Baked Whole Chicken with Lemon Preheat oven to 475° Ingredients: 1 whole fryer chicken organic 3 lemons 2 large potatoes or a bunch of smaller ones 1 sweet potato of any variety. I’m into the...

Chicken Pot Pie

Monday, 31 March 2014

You have to be a masochist to make a chicken pot pie. Honestly. It is such a pain in the butt – so time consuming – exhausting in fact. And although homemade pot-pies are delicious - so are Mrs. Swanson’s and you don’t have to do anything other than buy it and pop it in the oven. I remember when I was a kid my parents would go out on Friday or Saturday night and our babysitter Maria Ceraceda or her sister Agnes (who, by the way, was President of the Davy Jones fan club - FYI) would make us dinner (Chicken Pot Pies, popcorn or hot fudge Sundays – parfait style) and we got to eat on TV trays in front of the TV. Best nights ever. Sometimes Maria would bring her boyfriend Renee over and he would teach us sign-language – that...

Jared’s January Jubilee

Tuesday, 08 January 2013

Alan and I usually make a New Year’s Day party. We’ve been doing it for years. Greet the New Year and a Birthday party for Jared. This year J didn’t want his party on the 1st. I wasn’t wanting to do two parties in a one-week period – at least not right out the gate on January 1st (shocking isn’t it?). He wanted the party on the 7th so we cancelled our New Year’s day party and just made a birthday party – January 7th. 34 big ones….. Wow. The New Year’s Day menu always includes Hoppin’ John – blackeyed peas. Good luck and what not. But that somehow wasn’t enough this year so I thought I’d make Gumbo. When I was a meat eater I would go to Ivy at the Shore and order their Gumbo. It was...

Dia De Los Muertos or Dia De Muertos And Chicken Chilaquiles

Sunday, 11 November 2012

Alan and I were getting ready to leave for Oaxaca for his 65th birthday and Dia de los muertos aka Dia de muertos.  Alex stayed home with the dogs and I was so grateful and appreciative and I knew he’d want food or he’d go out all the time and that’s expensive and he has no income and I like to cook for him.  Ok…. I love to cook for him.  He’s a great audience AND he reads my blog for which I am also grateful.  And because Oaxaca is such a foodie paradise I paid homage and decided to mak him something representative…. Off I trotted to the grocery store and back I came with loads of chicken.  Now what…  The first obvious choice was an old family favorite of Crock-Pot Chicken – barely worth a mention other than...

Cinco de Mayo Pt 2 – Tortilla Soup

Saturday, 05 May 2012

Tortilla Soup (adapted from a combination of recipes from Rick Bayless’s Mexican Everyday via and Mark Bittman’s How to Cook Everything Vegetarian) (This recipe serves 8 people) It can be made for vegetarians and then chicken added at the end for the meat-eaters – which is what I did after segregating my vegetarian portion out. Ingredients for Soup: 2 large pasilla chiles, stemmed and seeded (recipe calls for dried – I used fresh) or you can use poblano or dried ancho chile. 3 pounds of fresh tomatoes or 1- 28 oz can of fire-roasted (or plain) tomatoes in juice. I used fresh. 2 large onions sliced 3 cloves of garlic sliced 2 sprigs of epazote (a Mexican herb) or a pinch of dried oregano or epazote (I used...

Tamales with Pablo

Saturday, 14 April 2012

I’ve made tamales before. Pablo taught me and I’ve made them with Cindy Ripley aka Luna Garcia. But I didn’t know how to do it by myself and I wanted to know from start to finish. So I asked Pablo if he would teach a class at my house and he agreed. Pablo is an electrician ( who moonlights as a cook or maybe he’s a cook who moonlights as an electrician. . .. In any event he’s an excellent cook and he makes out of this world tamales. We all flock to his house when tamales are announced. We got together early on Saturday morning with my friend Suzanne (see photos) and Pablo took us to his hometown of Boyle Heights for a tour. We went to his favorite breakfast spot and just missed a huge line out the door. We went to the...
