Sourcream Cupcakes with Cream Cheese Frosting
Today is the other Alex’s birthday. She’s out celebrating with friends and when Alex (my Alex) went down to join up with them, I had him take some cupcakes that I made for her. The recipe for the cupcakes is as old to me as Alex is (my Alex). . ..
This is how I came to love these cupcakes oh so long ago. . .. Just before Alex was born my sister and her then boyfriend opened up a little restaurant on 4th Street in Santa Monica just South of Wilshire.
It was called Positively 4th Street.
The food was delicious and since this was at a time in my life when my metabolism was a little faster, I was able to eat a whole bunch and still be thin. The place had the most perfect cupcakes and I could walk there from my apartment on 3rd Street – which I did from time to time as in regularly. Somehow I got my sister to give me the recipe. It’s a really nice recipe. I don’t know if my sister created this recipe or if someone gave it to her or if she found it and just instinctually knew it would be an excellent recipe – which it is.
The cupcakes are moist even when inadvertently over-baked and the frosting is cream cheesy – such a nice combination. One of the beautiful things about these tasty guys is that you can dress them down or dress them up. The photo here shows some of my best cupcake frosting (horrors!!!). Enjoy and have fun in the decorating.
Preheat oven to 350°
Ingredients for Cake:
1 cup plus 5 Tbsp butter
2 cups sugar
2 eggs, separated
3 ½ cups flour
3 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
2 cups sour cream
1 tsp vanilla
Whisk together flour, baking powder, baking soda, salt in a bowl and set aside
In a stand-mixer cream butter and sugar. When fluffy add in the egg yolks. Then add in the sour cream. Add the flour mixture to the butter/sugar mixture and mix until combined. Add vanilla. Beat the egg whites until s tiff peaks form. Fold the egg whites into the batter.
Line cupcake tins with paper cup liners and fill about ½ to ¾ full.
Bake on a rack in the middle position in a 350° oven for 20 minutes
Cool before frosting
Ingredients for Frosting:
3-5 cups powdered sugar
12 oz cream cheese
2-6 Tbsp cream or milk
3 tsp vanilla
Cuisinart the cream cheese until fluffy. Add the powdered sugar. Add the cream/milk. Add the vanilla. Be careful not to add too much milk/cream or the frosting will be too thin.
Frost the cupcakes however you’d like. I like to make mine look goofy and like I don’t know how to frost a cupcake (actually I’m no good at frosting things so it’s easier this way!)
