Ployes – French Buckwheat Pancakes

A while back I had a hankering for a super thin buckwheat pancake brushed with butter and sprinkled with powdered sugar or maybe drizzled with maple syrup. I have no idea why but I just wanted that. I went hunting for a recipe and discovered the ”ploye.” A ploye is a type of buckwheat pancake, popular in Canada and New Brunswick.

Also now popular in this house.

I don’t know that a ploye is necessarily a super thin buckwheat pancake but I made them super thin and they were delicious. They’re really great. Butter up the pan, pour the batter, cook on one side and you know when they’re done because they get beautiful little bubbles all over and they’re done when the wetness is gone and the bubbles popped. A quick flip over and voila! Done. Butter ‘em up. Sprinkle some powdered sugar over the top. Eat.

So good.

Ployes or Buckwheat Pancakes



1 cup light buckwheat flour

1 cup white flour

4 tsp baking powder (I like Rumford)

1 tsp salt

1 ½ cups cold water

½ cup boiling water

Directions: Whisk dry ingredients together in a bowl Add cold water and let stand for 10 minutes Add boiling water. Oil and heat a pan or use an ungreased cast iron pan or non-stick griddle. Pour the batter into the pan to make thin pancakes of whatever size you want. Bake on one side only until the bubbles pop and the top of pancake is dry. Flip over and then plate onto a warm platter.

Serve with melted butter and powdered sugar or maple syrup.
